That question used to mean just one thing—what does she like, carnations or roses?—and now it may include her favorite strain. Unfortunately, when baking for a chronic mom you can’t just sprinkle your bag of herb into the batter because it’s going to end up as a gross, green-flecked, grassy-flavored mess. If you know your mom’s favorite flower, pick up an ounce of it. Starting with a quickie tutorial on cannabutter, here’s all you need to bake your chronic mom something healing on Mother’s Day.
1 lb butter
1 cup water
1 ounce of ground cannabis flower for a potent dose per serving
The longer you let the cannabis infuse the butter, the more cannabinoids will be present in the end product. Some edibles makers let their infusions simmer for 18 hours. Achieve this with butter by adding water periodically to regulate the temperature.
The Stove Top Method
Step 1: Melt the butter into the water in a saucepan and allow to simmer on low.
Step 2: Add the ground cannabis.
Step 3: Maintain low heat and let the mixture simmer for 2-3 hours, stirring occasionally. Make sure the mixture never comes to a full boil.
The Slow Cooker Method
Step 1: Turn slow cooker to low and add the water, butter, and all of the ground cannabis flower.
Step 2: Let the mixture simmer on low for 8 to 24 hours, stirring occasionally.
Step 1: Simmer for your desired amount of time.
Step 2: Pour the hot mixture through cheese cloth into a refrigerator-safe container (glass only, please). Discard the cheesecloth and spent plant material.
Step 3: Cover and refrigerate until the butter is fully hardened. The butter will separate from the water, which should make it easy to take the butter from the container. Discard the water.
Step 4: Let the canna-butter sit at room temperature to soften to use in the two cannabis recipes below.
Old Mrs. Green’s Medicated Chocolate Chip Cookies
Mom used to ply you with chocolate chip cookies to lighten the mood, make your feel better, and fill you with pure homebaked joy. Isn’t it time you returned the favor? Now that you’re both adults, you can turn the recipe up a notch with expertly infused butter. Remember that chocolate is the main flavor in this recipe, so reach for the good stuff to make the chocolate chunks.
2 cups minus 2 tablespoons (8 1/2 ounces) cake flour
1 2/3 cups (8 1/2 ounces) bread flour
1 1/4 teaspoons baking soda
1 1/2 teaspoons baking powder
1 1/4 cups cannabutter
1 1/2 teaspoons sea salt
1 cup plus 2 tablespoons (8 ounces) granulated sugar
1 1/4 cups brown sugar
2 large eggs at room temperature
2 teaspoons vanilla extract
1 1/4 pounds chopped (mom’s favorite) chocolate bar
Step 1: Sift flours, baking soda, baking powder and salt into a bowl and set aside.
Step 2: Using a mixer with a paddle attachment, cream butter, and sugars until light and fluffy – about 5 minutes.
Step 3: Reduce speed and add eggs and vanilla.
Step 4: Slowly add dry ingredients, mixing until just combined.
Step 5: Fold in chocolate chips. Refrigerate dough for 24-36 hours. Do not skip this step.
Step 6: Drop spoonfuls of dough onto the baking sheet as the oven preheats to 350 degrees.
Step 7: Bake for 10-12 minutes, remove from the oven and cool the cookies on a wire rack.
Chewy, Fudgy, Ooey-Gooey Brownies
Ah! Brownies. They’re a classic stoner treat, but we dare you to step away from the safety of that Betty Crocker box and bake with cannabis, from scratch, a tray of these irresistible brownies. Between being chewy and fudgy, they are a beautiful balancing act.
7 tablespoons cannabutter
3/4 cup plus 2 tablespoons all-purpose unbleached flour
1/4 teaspoon baking powder
1/2 teaspoon sea salt
7 ounces (1 1/3 cups) chocolate (the good stuff!) chopped
3 tablespoons coconut oil
1 cup brown sugar
1 cup granulated sugar
3 large eggs at room temperature
You will need extra butter for preparing your pan. It does not have to be cannabutter, but it’s fine to use the medicated stuff too. Just remember the more you use, the more potent the end product will be.
Step 1: Preheat the oven to 350 degrees and prepare a 9-inch square baking pan by lining it with parchment, leaving a 2-inch overhang on two sides and buttering the inside of the parchment.
Step 2: Combine the flour, baking powder, and salt thoroughly.
Step 3: Simmering water, melt chocolate and butter with oil in a heatproof bowl and remove from heat once they are combined.
Step 4: Add both sugars and whisk 10 seconds.
Step 5: Add eggs and whisk vigorously until glossy and smooth, 45 seconds.
Step 6: Use a rubber spatula to stir in the dry ingredients before pouring the batter into a prepared pan and smoothing the top so that it is even.
Step 7: Bake until set and a tester inserted in center comes out with moist crumbs, 35 to 40 minutes.
Step 8: Allow the brownies to cool in pan on a wire rack 20 minutes, then remove using parchment; let cool completely on a wire rack before cutting into squares.
If this is your first foray into making edibles, it’s important to start low and go slow, grasshopper. The typically mandated dosage for commercial edibles is 10 milligrams of THC per serving. And the effects will differ from smoking marijuana, so if mom is a seasoned smoker, don’t assume that she can just start on an entire cookie if you have made cannabutter to the potency above.
